Research is summarized for the areas of: digestion, absorption, and excretion; energy and metabolism, neural, endocrine, and exocrine effects; vitamin and other deficiency diseases; nutrient requirements; diet therapy addressing various human health problems; food science (preservation, chemical and nutritive composition, hygiene, and test methods). The role of enzymes in nutrition and food technology is discussed separately. Nutrition surveys for select study groups (e.g., children, workers, the elderly) and geographical areas also are discussed. An overview of nutrition research status and accomplishments is appended.
