A given quantity will furnish practically a definite amount of nutriment, and, furthermore, a definite sum of money paid for wheat will purchase practically the same amount of nutriment wherever the wheat may have been produced. This is also true in regard to the same brand of flour made from the wheat. That it is not true of bread made from the flour, although the process of manufacture is practically unvarying, is very fully shown in the previous discussion. Definite information concerning the transformations that occur in food products between the grower and the consumer, and the relative cost of such transformations is much needed.
