But from the first, when he studied tartrates, to the last, when he wrestled with hydro phobia, his labors had two aspects practical importance and speculative interest; and while we recognize that no man of science has been of greater economic service to his country, we must not forget how he changed the whole theory of fermentation, and played at least an important part in establishing the germ theory of disease.
